Banana Cake

This recipe is so moist and yummy. It can easily be made vegan or non-vegan. For those of us who are not fans of the traditional banana bread this is another way to use up those leftover bananas. This is twice as good the next day!

1/2 cup soy butter, rm temp (or regular butter)
1 1/2 cups sugar
1/4 cup apple sauce x 2 (or 2 eggs)
2 cups flour
1/2 tsp. salt
1/4 tsp. baking powder
1/2 cup soy milk (or cows milk)
1/2 tsp. vanilla
3/4 tsp. baking soda
3 over ripe bananas, mashed

Mix all dry ingredients together and fold in the wet until mixed well. Pour into a greased 9x13 pan and bake at 350 degrees for 35-40 minutes. You can eat this plain like we do or top with cream cheese frosting.
